The cuisine of Pizzeria I’ Regolo is familiar and traditional; we like to carry on the traditions of typical Mugellan and Tuscan cuisine, using quality raw materials from the territory.
Homemade pasta, the one with the egg that still pulls by hand, as did our grandmothers that is transformed into noodles, potato tortelli, ravioli with ricotta and spinach, is seasoned with top quality ingredients and strictly at zero km.
Tradition and Innovation
The pizzas cooked in the wood oven are the result of a careful selection of professional flours (stone grind, integral, kamut), to obtain the taste, flavor and digestibility typical of the doughs of the time.
Finally, the care in the selection of high quality products and the respect of the short supply chain have given birth to a new inspiration “The Pizza Gourmet”! Featuring a light and digestible dough … In fact, the ring that joins the pizza and the kitchen, the pizza maker and the chef.
Quality and sweetness
Great attention to the excellence of the Florentine tradition: the Steak and not only… A careful selection of the best meats of Mugello makes our Menu more and more tantalizing: “Hamburger Gourmet”, knife beats, cut, all accompanied by an excellent offer of wines and craft beers.
Our desserts, finally, are prepared strictly at home, revisiting grandma’s recipes in a modern way; a great way to finish your evening sweetly.
AIC’s Out-of-home power project
We are proud to join the project promoted by the Italian Celiac Association to offer a complete service to our gluten-intolerant customers.
The Pizzeria I’Regolo in Scarperia and San Piero in Sieve is a restaurant adhering to the AFC: we participated in a professional course on celiac disease and gluten-free diet that provided us with all the necessary rules to prepare and administer gluten-free foods and avoid contamination.
The menu is fully aligned with all Gluten-Free needs. However, we will be happy to meet your requests for intolerances and/or allergies.
